Mermaid Spiced Rum draws its inspiration from centuries of shipwrecks that brought Caribbean rum to the shores of the Isle of Wight. Crafted from a blend of rums distilled in Trinidad and the Dominican Republic, aged between two and five years in ex-bourbon casks, the spirit is then infused locally with a distinct Isle of Wight twist. Rock samphire, apricot, and white cherry add fresh fruit tones, while honey from the distillery’s own beehives and black salt from the island’s floodtides bring depth and a coastal identity. Gently spiced with holy grass, cassia, and vanilla, this rum isn’t your typical sugar-sweetened “spiced” expression — it’s a smooth, layered spirit that nods to folklore while delivering genuine character.
