The Sparkling Spruce, created by Randy Walker (Abbotsford, BC), is a crisp, alpine-leaning sparkler built for people who like their bubbles with backbone. Gin sets the foundation with clean botanicals, while a small but mighty pour of Green Chartreuse adds a punch of herbal intensity that instantly makes the drink feel complex and elevated.
Lime cordial brings a sharp, sweet-tart brightness that ties everything together, and a couple dashes of orange bitters add a subtle citrusy lift. Finished with Villa Conchi Cava, it becomes light, refreshing, and vibrant, with a flavour profile that feels like a forest breeze in cocktail form.
Garnished with a lime twist, it’s zesty, herbal, and dangerously drinkable.

The inspiration behind this cocktail as explained by creator Randy Walker, “I was looking to enhance the fruit flavours in the Cava by adding the lime cordial and bitters. Additionally I wanted to complement these flavours and add some depth by adding some herbal notes with the Green Chartreuse and gin. I think the result is a delicious, refreshing drink!“

Ingredients
3.0 oz Villa Conchi Cava
1.0 oz Gin
0.25 oz Green Chartreuse
0.5 oz Rose's Lime Cordial or Homemade Lime Cordial
2 dashes Orange bitters
Garnish: Lime Twist
Directions
- Build in a shaker over ice (minus the cava).
- Shake until chilled and diluted.
- Strain into a chilled coupe, top with Cava and garnish.
