The Cavapple, created by Melissa Van Londersele (Victoria, BC), is proof that simple can still be seriously impressive. Bright, crisp Granny Smith apple juice sets the tone with fresh orchard acidity, while elderflower liqueur adds a soft floral sweetness that keeps the drink feeling elegant and lifted.
A touch of simple syrup rounds out the sharp edges, and a dash of orange bitters brings just enough citrusy depth to make the whole cocktail feel polished and intentional. Topped with cava, it becomes light, refreshing, and endlessly drinkable, like a sparkling apple blossom spritz.
Garnished with fresh apple slices, the Cavapple is playful, clean, and dangerously refreshing.

Cocktail Flavor Camps

The inspiration behind this cocktail as explained by creator Melissa Van Londersele, “the bright acidity of Cava lends itself well to the green apple, and the sweetness of elderflower balances and compliments the drink. I have always loved the way elderflower liqueur and sparkling wine interact together, effervescent and floral. The orange adds a bit of interest to the mid notes and rounds it all nicely.

Ingredients

  • 0.75 oz Fresh Granny Smith Apple Juice

  • 0.5 oz Elderflower Liqueur

  • 0.25 oz Simple Syrup (1:1)

  • 1 dash Orange Bitters

  • 3.0 oz Villa Conchi Cava

  • Garnish: Apple Slices

Directions

  • Build in a shaker over ice (minus the cava).
  • Shake until chilled and diluted.
  • Strain into a chilled coupe, top with cava and garnish.
