Ever wondered how sherry casks shape the rich, indulgent flavours of whisky? 🍷

Dive into the sweet side of whisky with Pedro Ximenez—dates, figs, and dark chocolate galore!  A great example of understanding the influence of Pedro Ximenez (or PX for the cool kids) casks on a whisky is 𝐓𝐰𝐨 𝐁𝐫𝐞𝐰𝐞𝐫𝐬 𝐑𝐞𝐥𝐞𝐚𝐬𝐞 𝐍𝐨. 𝟒𝟒.  This Yukon gem is part of their ‘Special Finishes’ range of single malts and spends about 12 years in ex-bourbon casks with 2 years finished in PX casks.  PS - This particular expression just won a Silver Medal at the Canadian Whisky Awards and is available in a few select BC Liquor Stores for a limited time only. Canadian whisky is more diverse than you think! 🍁🥃 
Under the Canadian tech file, there’s one catch-all category for all Canadian whisky, and terms like “Canadian Whisky,” “Canadian Rye Whisky,” and “Rye Whisky” are synonymous—with no minimum rye requirement. Confusing, right?  
Though many international drinkers know Canadian rye or blended whiskies, countless unofficial styles have emerged.

1️⃣ 𝐒𝐢𝐧𝐠𝐥𝐞 𝐌𝐚𝐥𝐭𝐬: Usually 100% malted barley (but technically can be any grain), often from one distillery.
 2️⃣ 𝐏𝐞𝐚𝐭𝐞𝐝/𝐒𝐦𝐨𝐤𝐲: Crafty methods like smoking barrels or using ex-peated casks supplement classic methods
 3️⃣ 𝐒𝐢𝐧𝐠𝐥𝐞 𝐆𝐫𝐚𝐢𝐧: Undefined, but often indicated one grain used.
 4️⃣ 𝐀𝐥𝐭𝐞𝐫𝐧𝐚𝐭𝐢𝐯𝐞 𝐆𝐫𝐚𝐢𝐧𝐬: Think Spelt, Triticale, Wheat, etc.
 5️⃣ 𝐁𝐨𝐮𝐫𝐛𝐨𝐧-𝐒𝐭𝐲𝐥𝐞: Made with a corn-predominant mash but can’t be called Bourbon because it’s not made in the USA.
 6️⃣ 𝐇𝐢𝐠𝐡 𝐑𝐲𝐞/𝐀𝐥𝐥 𝐑𝐲𝐞: No minimum rye rule, but many use high % or 100%.
 7️⃣ 𝟏/𝟏𝟏 𝐑𝐮𝐥𝐞: Up to 1/11 of aged spirit or wine can be added. More on this soon in a separate post!  Note: Only the styles in orange on our infographic are defined by Canadian regulations—others are unofficial!
