Lind & Lime Gin
February 19, 2025
TL;DR: A bright, classic dry style Scottish gin with a unique balance of lime, juniper, and pink peppercorn, inspired by Edinburgh’s maritime history.
Lind & Lime Gin is a masterclass in balance, bringing together zesty lime, bold juniper, and a touch of pink peppercorn for a refreshingly crisp and subtly spiced profile. Distilled in Edinburgh’s historic Port of Leith, this gin pays homage to Dr. James Lind, the Scottish naval surgeon who pioneered the use of citrus to prevent scurvy. Every sip reflects the distillery’s commitment to simplicity and elegance—just a handful of perfectly chosen botanicals, no unnecessary extras.Â

Tasting Notes
- Appearance: Clear, clean
- Aroma: Very classic London Dry Style on the nose with a slight citrus edge. Citrus peels (lime), coriander, cardamom, clove and angelica root notes are prevalent.
- Taste & Mouthfeel: The palate is very oily and rich. Pink peppercorn, more juniper and citrus are present.
- Finish: Tingly and viscous finish with a slight bitterness.
- Distinctiveness: There are notes of citrus, but we would have thought that it would be more distinctive.
- Overall Drinkability & Balance: This gin is a great premium alternative for the London Dry drinkers. Anything cocktails with lime juice or tonic would be fantastic with this expression. For those who are used to more delicate New International Style gins (i.e. Hendrick's), this may be an intense departure that may not appeal.

Comments / Notes:
Three things to remember about this gin:
A Tribute to a Medical Pioneer – Named after Dr. James Lind, who discovered that citrus could prevent scurvy, Lind & Lime Gin celebrates Scotland’s rich naval history.
Citrus-Driven Simplicity – Unlike many modern gins packed with an overwhelming number of botanicals, Lind & Lime keeps it clean and classic, with lime, juniper, and pink peppercorn as its stars.
Born in Edinburgh’s Port of Leith – Distilled in one of Scotland’s most historic maritime districts, Lind & Lime embraces the spirit of exploration, both in flavor and tradition.
Food Pairing Recommendations: We would recommend drinking this in G&T form with Cheese, Charcuterie, or dare we say, a hearty grain-based salad.
Cocktail Recommendation: Tom Collins, Gin & Tonic or Gimlet.
