The inspiration behind this cocktail, as explained by home bartender Adam Rucker, “this cocktail is inspired by the dark, rich flavour profile of Goslings Black Seal Rum and the mysterious, velvety texture of an eclipse. The combination of Amaro Montenegro and Angostura bitters adds depth and warmth, while the grapefruit juice provides a tangy and refreshing contrast.

Ingredients

  • 1.5 oz Goslings Black Seal Rum

  • 0.5 oz Amaro Montenegro

  • 0.5 oz Fresh Grapefruit Juice

  • 0.25 oz Aperol (adjust to one’s taste)

  • 2 dashes of Angostura Bitters

  • Garnish: Grapefruit Twist

Directions

  • Combine all ingredients into a cocktail shaker filled with ice.
  • Shake until chilled and diluted.
  • Strain over fresh ice.
  • Garnish.
