Winner of our July 2025 Vodka Cocktail Challenge, A Toast to Lincoln is nutty, silky, and just the right amount of indulgent. This cocktail finds inspiration in a neighbourhood coffee run and elevates it with precision. Toasted coconut–infused Dillon’s Vodka forms the base, layered with amaretto, coffee liqueur, and a whisper of amaro for a bittersweet edge. It’s cozy but grown-up, nostalgic but far from basic—essentially, your go-to “coffee cocktail” got a serious upgrade. Sip it slowly; it’s the kind of drink that lingers.

Cocktail Flavor Camps

The inspiration behind this cocktail, as explained by bartender Ellen Prime, “something I love about the Dillon’s vodka are the nutty & spicy notes. After going to my neighbourhood coffee shop and having a coconut latte, the inspiration was born and I knew I wanted to use toasted coconut to bring out the subtleties in the vodka and make it the star of the cocktail.

Ingredients

  • 1.5 oz Toasted Coconut-infused

  • Dillon's Vodka*

  • 0.5 oz Disaronno (Amaretto)

  • 0.5 oz Tia Maria (Coffee Liqueur)

  • 0.5 oz Amaro Averna

  • Garnish: Lime Leaf

Directions

  • Combine all ingredients into a mixing glass filled with ice and stir until well chilled.
  • Then, strain into a rocks glass with a fresh king cube.
