So Fresh So Clean

2 min reading time

Bright, vegetal, and savoury with a streak of salinity, So Fresh, So Clean is the ultimate summer highball. Featuring Dillon’s vodka, muddled cherry tomatoes, fennel bitters, soda water, and a house made salted lemon cordial, it’s a five-senses flavour ride. With acidity, umami, and a lingering spice, it balances culinary complexity with cocktail simplicity. Best served alongside cheese and olives, this drink is made for people who appreciate nuance and a little salt.

Cocktail Flavor Camps

The inspiration behind this cocktail, as explained by bartender Emma Osmond, “This is inspired by my love for summer tomato’s, and all things salty & sweet. Dillon’s vodka has a great viscosity for this serve, and enough peppery spice for a warm lingering finish. Flavours of salty, sweet, sour, umami, and bitter show the versatility of this vodka. Even better with an aged cheese snack and some olives.
