The inspiration behind this cocktail, as explained by bartender Kalisha Glover, “Redbreast 12 is characterized by its decadent red fruit and honey notes that play to a deliciously roasted finish. It has been likened to a Christmas cake and I wanted to complement these flavours in particular in my cocktail. I tried to imagine the kind of warming sip that I’d like to enjoy, sitting in the Irish countryside after a hearty potato dinner and decided these flavours, complemented by redbreast be the perfect dram before bed.”

Recipe by Kalisha Glover (Vancouver, BC)Difficulty: Easy

Flavor Camps: Boozy, Sweet, Bitter

Ingredients

  • 1.5 oz Redbreast 12 Year

  • 1/3 oz Amaro Averna

  • 1/3 oz Pedro Ximénez Sherry

  • 1 bar spoon Black Walnut Liqueur (Nocino)

  • 2 dashes Chocolate Bitters

  • Garnish: Chocolate Flakes

Directions

  • Stir all of the ingredients until diluted.
  • Pour into a rocks glass over a tempered big cube.
  • Grate dark chocolate flakes and enjoy.
