Showcasing the depth and warmth of Nikka, this cocktail pairs layered bitters with honeyed complexity for a sip that’s wise, welcoming, and just a little cheeky. It’s the kind of drink that says “cheers” with conviction.

The inspiration behind this cocktail, as explained by bartender Matt Dash, “I just adore this Nikka release that showcases deep, complex flavours that allow new whisky drinkers to get into high proof sipping whiskies. Of course such a refined spirit requires a nod to the maker themselves! This would be the cocktail that make Mr. Masataka Taketsuru, founder of Nikka distilleries and Godfather of Japanese Whiskey.”

Recipe by Matt Dash (Halifax, Nova Scotia)Difficulty: Easy

Flavor Camps: Boozy, Nutty, Spiced

Ingredients

  • 2.0 oz Nikka from the Barrel

  • 1 bar spoon Honey

  • 1 bar spoon Black Walnut Liqueur (Nocino)

  • 2 dashes Cardamom Bitters

  • 2 dashes Angostura Bitters

  • Garnish: Lemon oils

Directions

  • In a rocks glass add all ingredients.
  • Carefully add 1 large, clear ice cube.
  • Stir until properly chilled and diluted to taste.
  • Zest lemon oils on top, discard.
  • Serve to guest with a warm "Kanpai".
