Featuring Glendalough Wild Rose Gin, Lillet Blanc, fresh lemon juice, and honey syrup, it’s a delicate yet complex cocktail that brings out the gin’s soft, botanical character. A hint of blueberries adds depth, while egg white (or aquafaba) creates a silky texture. Topped with rose petals, this drink is as visually stunning as it is delicious—ideal for a special occasion or a quiet moment of indulgence.

Cocktail Flavor Camps

The inspiration behind this cocktail, as explained by bartender Kalisha Glover, “just in time for Valentine’s Day, I wanted to make a cocktail for wild lovers that could be enjoyed all year round. Whether it be a platonic, familial or romantic, I wanted to find a way to create love in a glass using Glendalough’s Wild Rose Gin.

Honey Bouquet

Recipe by Kalisha Glover (Vancouver, BC)Difficulty: Moderate

Flavor Camps: Fruity, Sweet, Sour, Frothy

Ingredients

  • 1.5 oz Glendalough Wild Rose Gin

  • 0.5 oz Lillet Blanc

  • 1.0 oz Fresh Lemon Juice

  • 0.5 oz Honey Syrup*

  • 3 Blueberries

  • 0.5 oz Egg White or Aquafaba

  • Garnish: Small Rose Petals

Directions

  • Add all ingredients to a shaker and dry and wet shake.
  • Double strain into a coupe.
  • Sprinkle rose petals (or other flowers) across half of the cocktail, leaving the other half clear for drinking.

Notes

  • *Honey Syrup: Combine honey into warm rich (2:1) simple syrup in equal parts and stir until fully combined.
