What the Doctor Ordered, delivers all the indulgence of an ice cream float without the guilt! Inspired by Kat Sears’ love of ice cream floats, this drink balances Glen Grant 12 year with black walnut and a splash of Dr. Pepper syrup, and a hint of saline for depth. It’s a playful, refreshing treat that’s complex yet smooth—just what the doctor ordered!

Cocktail Flavor Camps

The inspiration behind this cocktail, as explained by Kat Sears, home bartender currently living in Fogo, Newfoundland, “
I love a good ice cream float and always have. I would eat a different flavor everyday if I could, but know it won’t agree with me in the end. I wanted to give the feeling of a float without and consequences. Bringing out the nutty and bright flavor of the whiskey, whilst also not overwhelming each ingredient as a whole. This way I can have my cake and eat it too!”

What the Doctor Ordered

Recipe by Rob Walker (Victoria, BC)Difficulty: Moderate

Flavor Camps: Sparkling, Spiced, Sweet

Ingredients

  • 1.5 parts Glen Grant 12 year

  • 0.5 parts Black Walnut Liquor

  • 0.5 parts Dr. Pepper Syrup*

  • 5 drops of saline solution (4% solution)

  • 4 dashes Orange Bitters

  • Soda Water to top

  • Garnish: Orange Oils & Twist

Directions

  • This drink is built in a high ball glass.
  • Add all ingredients except the soda water in to a glass with clear ice and give it a quick couple of stirs to bring everything together.
  • Top with soda and garnish with expressed orange oils and a swath cut with a zig zag cutter or craft scissors.

Notes

  • Dr. Pepper Syrup:
    1.5L Dr. Pepper

    Place the Dr. Pepper in a pot and slowly reduce on low-medium heat to a quarter of the volume or around 300ml or so. The syrup should be thick, but still very pourable. Store in the fridge for further use.
  • Saline Solution (4%):
    94 g Filter Water
    4 g Sea Salt

    Add both ingredients together to dissolve the salt. Store in a dropper for further use.
