Hearach First Fill Oloroso Cask Matured
June 20, 2025
TL;DR: Lightly peated and fully aged exclusively in first-fill Oloroso sherry butts, this Isle of Harris expression marries delicate smoke with rich, dried-red-fruit sweetness. Versatile and sippable, it’s a solid gateway to peated sherry cask whisky, though its subtler profile might get overshadowed in cocktails. Distinct but refined.
Distilled on Scotland’s Isle of Harris and lightly peated at 12–15 PPM, The Hearach Oloroso is matured exclusively in Andalusian first-fill Oloroso butts sourced from Bodega José y Miguel Martín. Bottled at 46 % ABV (non-chill filtered, natural color), it’s a refined evolution of the distillery’s peated baseline spirit. Aged for a minimum of 16 weeks in sherry (though actually 6+ years per independent review) this expression pushes the brand to bold, aromatic depth while retaining its coastal-fresh heritage.

Tasting Notes
- Appearance: Gold
- Aroma: A light curl of smoke over dried cranberries and strawberry Fruit by the Foot. Rich and oily, with black licorice, cinnamon, clove, black pepper, wine gums, and creamy malt rounding things out. A very slight herbaceousness creeps through.
- Taste & Mouthfeel: A hit of zesty spice—ginger and black pepper—followed by vanilla toffee, leathery undertones, earthy tobacco, and more of those juicy red fruits. Malty and warm.
- Finish: Medium length with lingering sweet smoke, dried fruit, and a leathery, subtly spiced fade.
- Distinctiveness: Light peat in a Speyside malt? That alone stands out. The contrast of orchard fruit and smoke is unexpected but works beautifully.
- Overall Drinkability & Balance: Exceptionally sippable and well-integrated. May get lost in cocktails, but neat or with a few drops of water, it reveals lovely layers.

Comments / Notes:
Born in Harris: This is the first whisky ever legally distilled and bottled on the Isle of Harris.
Full Sherry Maturation: Matured exclusively in first-fill Oloroso butts, not just finished—uncommon for peated single malts.
Sustainable Purpose: The distillery was founded to support the island’s community through employment and tourism.
Food Pairing Recommendations:
Moroccan lamb tagine: Dried fruit, spice, and earth echo the whisky’s sweet-spicy balance.
Aged Manchego with quince paste: Savory, nutty cheese complements the leathery malt while the quince mirrors dried cranberries.
Molasses cookies: Earthy, spiced, and chewy—these mirror the leathery tobacco richness and carry the whisky’s sweetness through the finish.
Best consumed neat, but try it in a Marseille Sour!
