If you’re allergic to Penicillin, an alternative prescribed is Doxycyline. Just like if you’re not a fan of peat, perhaps this funky alternative, showcasing Jamaican rum is sure to titillate your palate.

Ingredients
2.0 parts Aged Rum
1.0 part Lemon Juice
1.0 part Banana Honey Syrup*
0.5 part Ginger Juice**
0.5 part Funky Jamaican Rum
Garnish: Candied Ginger
Directions
- In a cocktail shaker add all ingredients with ice.
- Shake vigorously until chilled and diluted
- Strain over fresh ice in a rocks glass
- Garnish with candied ginger & enjoy!
Notes
- *Banana Honey Syrup: Chop up one overripe banana and place in a sauce pan with 0.5 cup honey and 0.5 cup water on low-medium heat. Mix ingredients and let simmer for 5-7 minutes stirring occasionally. Fine strain out the banana chunks and let cool before use. Keep refrigerated for up to 2 weeks.
- **Ginger Juice: The quick and dirty way is to peel ginger and chop. Add 2x the amount of water (by weight) in a blender and blend. Fine strain out the particles before use.
