The inspiration behind this cocktail, as explained by Chickadee Room Bar Manager David Kandal, “I wanted to make a cocktail that evoked autumn in Cottage Country. The leaves changing to a deep bronze, the apple orchards, the warmth of a crackling fire on a brisk night. Reifel Rye provides a perfect base with a generous helping of baking spice and new oak. In combination with the deep warmth of the apple cider, accentuated further by a small portion of an easy homemade cinnamon syrup, and the crisp vibrancy of the Amontillado Sherry, the Cottage Country cocktail will have you hearing loons on the lake and leaves underfoot.“

Ingredients
1.5 oz Reifel Rye
1/3 oz Amontillado Sherry
0.75 oz Apple Cider
0.5 oz Lemon Juice
1/3 oz Cinnamon Syrup*
Garnish: Apple Fan
Directions
- Shake all ingredients with ice.
- Double strain into a coupe & garnish with fresh apple slices.
Notes
- Cinnamon Syrup*
500ml Water
4 Cinnamon Sticks
1.5x Weight in White Sugar
1. Combine water and roughly broken up cinnamon sticks in sauce pan
2. Bring to a boil a cook until reduced by half
3. Strain off solids
4. Return to heat and dissolve 1.5x weight in sugar
5. Let cool, and store in refrigerator
