about the cocktail

Chiaroscuro was created for our Bring the Bright cocktail challenge in August 2026 by BC bar manager Merlin Fisk (@Merlinfisk). Built on contrast, it sets Altamura vodka and grapefruit liqueur against a grapefruit and caraway cold brew, with black lemon bitters and tonic bringing brightness through bubbles rather than sharp acidity. Merlin explains, “Named after the Italian painting technique of dramatic contrast between light and shadow, Chiaroscuro is built around Altamura’s naturally expressive profile: delicate grapefruit and lemon citrus, creamy cereal sweetness, and a gentle seed-spiced warmth, characteristic of its 100% Altamura durum wheat.
Grapefruit provides a rich citrus expression, while tonic and black lemon delivers brightness through effervescence rather than sharp acidity. A grapefruit and caraway cold brew lends the drink its colour and roasted, nutty warmth — the shadow against which Altamura can shine while echoing the biscuit-like character of the durum wheat.
Aromatics are equally intentional. Fresh grapefruit and dill prepare the palate before the first sip, creating an expectation of herbaceous freshness — a subtle invitation to discover that same lift within the drink, grandly revealing Altamura in the foreground.
The result is a cocktail mirroring Altamura’s own balance: bright yet grounded, delicate yet structured, complex without becoming heavy.”

1.75 oz Altamura Vodka
0.25 oz Giffard Crème de Pamplemousse (grapefruit liqueur)
1.5 oz Grapefruit + Caraway Cold Brew (cold brew infused with fresh grapefruit and caraway seed)
2 dashes Scrappy’s Black Lemon Bitters
3 oz Canada Dry Tonic
Garnish: Dill sprig + 1/2 grapefruit round

method

1. Chill rocks glass (best served with all ingredients pre-chilled!)
2. Top chilled rocks glass with ice
3. Measure ingredients into glass over ice, adding tonic last
4. Stir gently and garnish with dill and 1/2 grapefruit round
5. Serve!

additonal preparations

Grapefruit + Caraway Cold Brew
1. Combine 150g of ground espresso, 375ml water (can be substituted for 375ml store bought cold brew), and 1/2 a grapefruit, 5g Caraway seed to a vac-seal bag or lidded container, let infuse for 24hrs (stir occasionally)
2. Strain mixture through coffee filter, mash grapefruit to extract juices
3. Portion, label, and date, keep refrigerated for up to 3 days.
