about the cocktail

Americano Bianco was created for our Bring the Bright cocktail challenge in August 2026 by Toronto drinks professional Kyle Smith (@w.kyle.smith). Pale and bright like a glass of white wine, this take on the Americano combines Altamura vodka, dry vermouth, green plum cheong and a few drops of olive brine, topped with tonic. Kyle explains, “Americano Bianco explores brightness through three expressions of fruit: grape fermented into dry vermouth, green plum preserved with sugar as cheong, and olive preserved in brine. Altamura Vodka brings durum wheat and cereal character to the centre, while tonic provides the crisp bitterness and carbonation of an Americano. The result is pale and bright like a glass of white wine, but with the bittersweet, refreshing structure of the Italian classic.”

1 oz Altamura Wheat Vodka
1.5 oz Dry Vermouth
0.25 oz Green Plum Cheong
2-3 drops Olive Brine
Top with Tonic Water
Garnish: Green Olive, Lemon Center Preferably

method

Add ice to a highball. Add Altamura Vodka, Vermouth, Cheong, and Brine. Stir. Top with Tonic Water and stir briefly to combine. Top with olive.

additonal preparations

Maesil-cheong, or green plum cheong, can be found at Korean grocery stores, commonly labelled “plum extract.” Look for one made simply with green plums and sugar.
