This clarified tequila cocktail is somewhat of an homage to the classic pina colada but with agave, sherry and clarification. Need we say more?

Cocktail Flavor Camps
Created by bartender Katheryn Sears, this cocktail was one of the top four finalist recipes for the Flavor Camp Tequila Cocktail Challenge in April 2024.
As Sears notes, “my recent trip to Mexico for two months this summer has got me head over heals for agave and I just can’t get enough of that Agave. My aim was to create a skillful cocktail that was not just pleasing to the taste buds, but also to the eyes. Taking simple ingredients and transforming them was the goal and knowing culinary techniques are important my bartender journey, clarification seemed fitting. I chose the name turtle club because, the hatching of the turtles is a yearly occurrence in Mexico and it is one of the most joyful times of the year to see fresh life breathed into our world. It is a simple yet complex part of the journey we all can appreciate.”
This is a clarified milk punch which can be simple to operate and will last a long time if stored properly in the fridge. The cream smooths the cocktail out and give it a dessert feel.
Turtle Club
Recipe by Kathryn Sears (Fogo, Newfoundland)Difficulty: HardIngredients
1.5 oz Casamigos Blanco Tequila
0.5 oz Amontillado Sherry
0.75 oz Heavy cream
1 oz Pineapple Juice
0.75 oz Lemon juice
0.5 oz Simple Syrup
Directions
- Add everything but heavy cream to a vessel and stir.
- Add heavy cream to this vessel and let sit 24 hours.
- Once 24 hours has passed you will then strain the liquid through a coffee filter twice until the liquid is clear.
- Store in the fridge until needed. Serve up or on a clear ice cube and with a lemon/lime coin garnish.
