The inspiration behind this cocktail, as explained by bartender Kalisha Glover, in Vancouver, BC, “A string of bars in Sydney sling whisky and fresh apple juices as their signature special. My love for this combination of flavours inspired me to create this tangy, fresh Paper Plane twist.“

Ingredients
1.5 parts Bourbon
3/4 parts Amaro Montenegro
3/4 parts Fresh Lemon juice
1/2 parts Apple Syrup*
Half a Kiwi Fruit (Muddled)
Directions
- Muddle the kiwi fruit into the bottom of the shaker.
- Add the other ingredients and shake.
- Double strain over fresh ice in a rocks glass.
- Garnish with fresh kiwi and apple slices and enjoy.
Notes
- This cocktail is one of the finalist recipes in our June 2024 Cocktail Challenge.
- *Apple Syrup: Blend two peeled pink lady apples with 500g of sugar and 500mL of hot water. Fine strain into a bottle. Keep refrigerated for up to 2 weeks. To preserve, you can add an ounce of Applejack or Calvados.
